The Story

Classical training. Sharpened on the Las Vegas Strip.

Oscar Sanchez earned his culinary diploma from Le Cordon Bleu in 2000, then went back to school twice more — Italian cuisine at the Italian Culinary Institute in 2002, and Spanish cuisine in Orense, Spain, in 2011.

He started on the line at the Bellagio in 1999 and was sent to Mississippi that same year to help open the Beau Rivage. What followed reads like a map of the Strip: Fiesta, Suncoast, Zeffirino at Caesars Palace, then the Renaissance Hotel — where he ran convention breakfast service for up to 10,000 people a day.

From 2009 he spent four years as Chef de Cuisine at ARIA's Julian Serrano, the Spanish restaurant, in a kitchen turning over $12 million a year. Since then he has opened and consulted on restaurants across the valley — one of which he took to #6 out of 4,500 restaurants in town, lifting revenue around 55%.

Today he splits his time between Oscar Catering, restaurant consulting, and a role as Regional Chef and Food Director feeding 900+ guests a day at a family summer camp programme.

Won the Las Vegas title in a surprise-basket format, judged against the city's competing chefs.

Carried the Las Vegas title to the national final and finished runner-up in the country.

Recognised for international gourmet cuisine — the third major award of his career.

    Restaurant Business Consultant

    Working with restaurants across the valley on new menus and recipes, food cost and labour, staff training and day-to-day business operations.

  2. 2023 – Present

    Wolfoods — Regional Chef / Food Director

    Running the kitchen for children and families at summer camp, preparing meals for over 900 people. Kosher and allergen protocols, special-diet cooking, gluten-free, dairy-free and vegan production, and full staff training.

    Leone Café — Executive Chef

    Ran the restaurant end to end: menus, food cost, inventory, purchasing, scheduling, training and consistency on the plate.

    Westgate Resort — Chef de Cuisine

    In charge of the employee dining room and room service. Cost control, gluten-free menu development and back-of-house management.
